Mulligan Stew Smoothie: No, It’s Not What You Think

 

Have you ever heard of Mulligan Stew? Sure you have! Originally, the name refers to a meal homeless people from the early 1900s created by throwing together found food, resulting in a stew. Now, it refers to making a meal out of the leftovers, scraps, and left-behinds in your pantry and fridge.

 

Wait—don’t worry. I didn’t make a smoothie out of kale and bacon (hmm…). But I did make a smoothie out of the last remaining ingredients in my house. You know I don’t like to waste food and only grocery shop every two weeks, right? Well, I had not planned on grocery shopping until the next day, so I decided to use up the last bits of produce and healthy food for my smoothie. And guess what? It was delicious!

 

With only vegetables and no fruit or milk, I decided to use yogurt as a creamy, sweet substitute. Honey served as a sweetener and oatmeal as protein. It satiated my hunger and counted as my veggie intake for the morning.
